Seared sea bass on rutabaga puree* with beurre blanc and baby bok choy. It was garnished with some minced Calabrian peppers and fried Serrano ham shavings to kind of give a little edge to it.

*I tried something a little out-there with the puree by smoking chunks of rutabaga with crushed pieces of cinnamon stick and pistachio shells. The next day, I cooked it in a saffron-milk/cream mixture before pureeing. It was a random experiment that I wasn't really sure about, but it came out really nice. It's definitely something I'll employ in the future in some form of other. I highly recommend it if you can acquire the ingredients.
