I think we could push this to the extreme, by replying only "k" in the body of the mail.
Or maybe even "kthxbye" while we're at it.
"kthxbye" is quite obviously rude/sarcastic and not just indifferent, implying that her confession stirred some form of emotion. I think "k" borders to that too. "ok" seems like the ultimate option to me, not suggesting attempts at firing back while still being casual about the whole thing. I was going to suggest something like "sure" or "fine", but really just "ok" is perfection.
