Mashed potatoes leftovers? (7)

Hi guys. I'm the guy who used to hate the chicken. Now I only dislike it very much =P

Last night, there was a lot of mashed potatoes we couldnt eat (there were supossed to be 8 guys at dinner, but three of these couldn't come). I don't feel like just putting all that in the microwave and reheat it. You can't feed it to the dog, either. A Sheperd's pie would be overkill. Pommes duchesse... no thanks. I think i'll try a colcannon for today's dinner, but i'd like to hear other suggestions.

potato cakes are the easiest and most common use for leftover mashed taters, you can get many recipes online...

Mix a beaten egg and a large onion (finely minced) into the cold leftover mashed potatoes. Form them into patties. Fry on both sides in a pan with a little oil.

They're very tasty that way.

Put some cheese, garlic, mushrooms and pepperonni in that. Microwave it and mix with a fork. You could add some ham or lard, too.

hmm... make them into potato croquette... and stuffed some mozzarella in it..
