[Question, Piano] Does anyone know about reading sheet music? (4)

So I recently (yesterday) started to learn the piano, and it's really cool. I can read the scales enough to play really basic songs.

My question is regarding the pitch of the notes, I guess. How do I know which A-G I'll be using for a particular piece? I've brute-forced it for the song I played earlier saying "Yeah, it sounds like this set of notes" but there has to be a way to know without trial/error.

Learn where middle c is, then move up or down however octaves it tells you to.

Thanks for your help. With your answer, I was able to google a more accurate question and find someone with the same question and a detailed answer. When talking about middle C, I was only thinking in terms of the piano - not the sheet music too. I also found some other information that I didn't know that I should know, so really, thanks for your help. I'll be sure to come back when I can play this thing correctly.
