I found out about http://ichthux.com/ a few minutes after posting >>1 - it's like the kubuntu of UCE.
But unlike UCE, it doesn't even try to pretend to add any value at all, and visiting the homepage is more a "LOL" experience than UCE, which would be more a "WTF" experience, because of some gems like these on the ichtux homepage:

And among the 9 features on the homepage: "a Christian emoticons theme by default in Kopete".

I think that's pretty cool how there are distros for very specific uses - I recently used an installable livecd made for ruby on rails development ( http://www.railslivecd.org/ ) on an old laptop to have a quick development workstation while on vacation.
Since making your own OS is becoming really easy and torrents work great, I wonder just how specialized linux distros will become. I'm sure that we're going to see a lot of derivative vanity distros that only consist of tweaked settings, more software by default, and a different visual theme.
I'd even bet that one of the first of them will try to be as complete a Mac OS X rip-off as possible - this one never goes out of fashion in the computer ricing communities.
