In Britain, sage has for generations been listed as one of the essential herbs, along with parsley, rosemary, and thyme (as in the folk song "Scarborough Fair"). It has a savory, slightly peppery flavor. Sage appears in the 14th and 15th centuries in a "Cold Sage Sauce", known in French, English and Lombard cuisine, probably traceable to its appearance in Le Viandier de Taillevent.[12] It appears in many European cuisines, notably Italian, Balkan and Middle Eastern cookery. In Italian cuisine, it is an essential condiment for saltimbocca and other dishes, favored with fish. In British and American cooking, it is traditionally served as sage and onion stuffing, an accompaniment to roast turkey or chicken at Christmas or Thanksgiving Day, and for Sunday roast dinners. Other dishes include pork casserole, Sage Derby cheese and Lincolnshire sausages. Despite the common use of traditional and available herbs in French cuisine, sage never found favor there.

Hear me out a second, it's really related to what you're all discussing. I went to Greggs the other day, you know Greggs? But the place was packed, and I joined the queue outside the door, in the rain. As I got closer to the sandwich shelves, I could see there weren't many sandwiches left, but couldn't see what I fancied. I figured I'd wait til I moved forward in the queue a bit so I could get a closer look at them, but people behind me in the queue were moving in front of me to pick their sandwiches then moving back to their place in the queue. I felt like grabbing them by the scruff of the neck and flinging them out the door, but I concentrated on my breathing to calm down.
When I finally reached the sandwiches, there were no chicken+lettuce and no chicken+bacon baguettes left. There was one Mexican chicken one, but it looked like it had been squeezed by a dozen people before me. I settled on the “tuna crunch” baguette. I love tuna, but normally I avoid prepared tuna products on sale to the public; idk, I just feel a bit funny about certain foods made by strangers. But I went for it anyway, with a bottle of Lucozade in the meal deal. I shoved them in my pockets and went home to eat my lunch.
Well, I should have stuck to my tuna principles, because the baguette was boggin'... dry, stale tuna with hardly any mayonnaise, and slimy red onions that had lost all crunch, wrapped in stiff chewy bread. I took a couple of bites and had to put it down. But I didn't have anything else in the house to eat, and not enough time on my lunch break to go buy something else. Like an idiot, I forced myself to eat half of the baguette. The consequences came a few hours later, when I got the mega-shits at work 15 minutes before home time!
What I'm trying to say is, it's best to be responsible for your own tuna if you want to keep your digestive system nicely in tune!
