Unfortunately most people will find it rude if you shut them down directly. It's much less abrasive to ask a question which indicates your knowledge of the subject, for example:
"Oh yes, I think I've heard about that. What do you think about X?"
or
"Ah yes, isn't it also true that X?"
Where X is something that indicates deep understanding of the concept.
Of course there are many variations on this, the main point is not to directly shut them down with "I know." If you want to change the topic, make X something only tangentially related. If they don't take the hint after multiple attempts to indicate your knowledge, turn the tables by painstakingly explaining the concept to them. Or you can always just make an excuse to end the conversation.

Let's talk about something else. I just found out that there are some alcoholic drinks that have caffeine in them. This both intrigues and worries me. It could be interesting but I could see it going horribly wrong, as it would mask how drunk you are, or possibly lead to elevated risk of cardiac arrest because of the uppers and downers stressing out your heart. But it could also be fucking awesome.

Alcohol + caffeine drinks are banned, at least as premixed drinks, in a lot of places for exactly that reason though. They all had names like "jolt" or "jaguar" and teenagers kept drinking 30 of them at a time and dying, so they're even banned in Russia now.
Take it from a pro narkoman, don't mix uppers and downers. Good way to die or at least end up very sick. Benzos go well with just about everything though, takes the paranoiac edge off of weed or uppers and makes downers even more comfy.

People who use long and fancy synonyms for simple words often do so solely as an attempt to obfuscate their message and seem smarter than they actually are, but in doing so they are making their message less clear, and that's not an effective form of communication. People who do this think they're the only ones who do this, but I've seen it time and time again from English majors. Awkwardly shoehorning GRE vocab into your writing looks bad and it doesn't fool anyone.
Some people just love language... you can tell when someone's just learned a new word and want to show off, but I like speaking to people with big vocabularies, especially with broad accents. People maybe often do do it to sound smarter, but sometimes a less common word is more precise, or has nicer connotations, or is just better alliteratively ^___^

Complicated language is often about the writer. It's self-centered. YOU want people to know that YOU are smart. YOU want to express yourself in a way that makes the most sense to YOU, even if it makes less sense to your audience. YOU want to show off what you learned over the years, even if no one else cares.
Simple language is about prioritizing the listener over the speaker. Try to make the message as easy for them as possible. The point of communication should be ensuring that the audience understands.
It's not condescending, it's about efficiency. People might be able to understand a 5,000 word essay from a very articulate person who likes to show off their personal lexicon, but a 500 word essay with easier-to-digest words is preferable because you get the same message across with less time and effort for the reader.

Instead of having a small amount of content and trying to make it as long as possible, you have a lot of content and need to try and make it as brief as possible.

There's no irony. All those things you mention are superficially modern. Etsy us just another face of the idea of a marketplace which has been around for millenia. They're (I'm assuming) using their time and effort to produce crafts and artisanal goods. The only thing is the marketplace they sell it at isn't a physical one. This is partially out of necessity and partially out of convenience. All of the things you listed that are supposed to run counter to living a "traditional life" are updated formats of preexisting things. Saying "they use the internet so that invalidates the fact that they are living traditional lives" while they are in effect artisans living off their product and physical work is absurd. More importantly how is their family structure? What is their outlook on life? What values do they put emphasis on? These are much more important things to look at than when evaluating them than "well they have a Pinterest account" and other things that are essentially modern wallpaper on age old concepts.
