An unfortunate amount of conservation makes poster children out of species that deserve to be extinct while overlooking more important, but less "cute" or "cool" ones. There aren't any more phorusrhacids or entelodonts either, but you can't pin that on humans nor on any apocalyptic event. They just couldn't hack it against other species. If you want to try something new to serve with delicate white fleshed fish like sea bass, cod, halibut, etc.try this puree. Take approximately 1 inch rutabaga cubes and smoke them using cinnamon fragments and pistachio shell. Let sit overnight then cook in saffron-infused milk and puree it. If you have a high powered blender (>1 hp motor) just puree till smooth. Otherwise puree as well as possible and pass it through a fine mesh strainer.
You can do the smoking on your stovetop if you have a dutch oven or large pot with a tight fitting lid. Just make a flat packet of foil with your smoking fuel in it and perforate the top of the packet the tip of a knife. Put that on the bottom of the pot and put the cubes on a rack or similar inside the pot. Leave the lid cracked and heat on medium high till you see the first wisps of smoke then close the lid and let it go for a 5 or so minutes then lower it to low to medium-low for another 10 minutes then turn off the heat. Let it sit for a while so the smoke to mostly settles and you're done. This method is good for quick smoking a lot of stuff.

Years ago when images was first introduced I had some retarded political argument on there and whoever it was that argued with me in good faith instead of just saying "we don't do that here" actually changed my mind on the topic. Ah, you're right, I had mixed up hol with the other remnants of hal (heal, hail, holy, etc) which lack the w, and made the assumption that hole was from the same root. However, the wh disambiguation is commonly accepted, it is not likely that any dialect pronounced it with the /hw/ sound in older pronunciations of "what" and "wheat" and so on, this doesn't survive in other instances of /h/ initial words and other dialects wrote it as hole even after the w was adopted.
With regards to height, do you mean the vowel shift in writing only or the irregular -t in place of -th? I can think of some other words which descend from a historical -th, such as theft. The vowel shift is unusual, I think the e was added as an analogy to other -th words which had historical umlauts.
